Originally developed for the NoMad Hotel in Los Angeles, we decided to make this sort-of bowl, sort-of plate available to home cooks because its flat surface and shallow sides make it perfect for mezze. Imagine one holding hummus topped with sautéed mushrooms, another with labneh and fresh herbs, and another with triangles of toasted pita bread for dipping. It was designed for crudo, but Chef Daniel Humm uses it for a number of different dishes at the Nomad LA including roasted eggplant and a pickled carrot salad.
